Tasty Tacos 

Give these chicken tacos a try- I promise you won’t be disappointed! You can try them with your favourite taco wraps or these make a great salad topper.

Tasty Tacos

  • 300 grams of chicken (I used chicken thighs)
  • 1 bell pepper
  • 2 garlic cloves
  • 1 onion
  • 2 tomatoes
  • 1 jalapeno pepper
  • 1 lemon, juiced
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 3 cups purple cabbage
  • 1/4 red onion
  • 1/2 cup buffalo kefir
  • 1 lemon, juiced
  • Salt, to taste
  • 2 avocado
  • 1/2 lime, juiced
  • 1/4 cup cilantro
  • Salt and pepper, to taste
  1. Chop the bell pepper, onion and tomatoes. Dice the jalapeno and garlic and place in the slow cooker
  2. Mix your taco center spices: cumin, oregano, paprika, black pepper, and salt. Coat boat sides of the chicken thighs with the seasoning and place in the slow cooker.
  3. Set on high for 3 hours or low for 5 hours
  4. To prepare the coleslaw: thinly slice the purple cabbage and red onion, add to a bowl with kefir, lemon juice, salt, pepper and coat evenly.
  5. To prepare the guac: pit and peel two avocados and add to a bowl. Mash the avocado thoroughly. Chop the cilantro and add to the bowl with the lime juice, salt and pepper. Combine evenly.
