Creamy Cauliflower Soup

January is usually one of the coldest months for our Canadian winters. Even though we have been quite lucky this year, it is always nice to have a warming, comforting & nutritious soup to get us through!!

Ingredients

  • 3/4 head of cauliflower
  • 1/4 head of broccoli
  • 1/4 onion
  • 1 garlic clove
  • 1 tbsp olive oil
  • 3/4 cup veggie broth
  • 1/4 cup water
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp Pumpkin seeds

Instructions

  1. Heat olive oil,
  2. Once heated add garlic and onion. Cook until translucent.
  3. Add the broth, cauliflower and broccoli, cook until soft.
  4. Put the pot contents, spices, pumpkin seeds and water in the blender and blend until smooth
