Quinoa Greek Salad

This is a great side for any dish! It’s very simple to make, and a great crowd pleaser for potlucks.

QUINOA GREEK SALAD


  • 1 cup of quinoa, cooked
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of kalamata olives, halved
  • 1/2 small onion, chopped
  • 1/2 lemon, squeezed
  • 4 fresh parsley stems, minced
  • 2 tbsp EVOO
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Combine all ingredients in a bowl, give it a stir and enjoy!
