This is a great side for any dish! It’s very simple to make, and a great crowd pleaser for potlucks.
QUINOA GREEK SALAD
- 1 cup of quinoa, cooked
- 1 cup of cherry tomatoes, halved
- 1/4 cup of kalamata olives, halved
- 1/2 small onion, chopped
- 1/2 lemon, squeezed
- 4 fresh parsley stems, minced
- 2 tbsp EVOO
- 1 tsp salt
- 1 tsp black pepper
- Combine all ingredients in a bowl, give it a stir and enjoy!
